Updating to iOS 14 / iPadOS 14 beta over the air is generally the route everyone is going to take due to its sheer simplicity. But that can cause quite a bit of problems if you have a lot of apps installed and lots of services running in the background. All your apps and services will be broken one way or the other, causing quite a bit of problems. So, in order to avoid all of that, the best thing you can do is perform a clean install of iOS 14 / iPadOS 14 beta. Sure, it can be a big complicated, but it will be worth it if you want to experience the newly released beta to the finest.
First of all, you need to make sure that your device is compatible to run iOS 14 or iPadOS 14 beta. If it can run iOS 13 or iPadOS 13, then it will run the latest beta. But it does not hurt to check anyway, so head over to this link for more details:
Secondly, make sure that everything has been backed up properly since a clean install will wipe your iPhone or iPad well, clean! Having a backup in iTunes, Finder or iCloud should be your utmost priority before going ahead. If you don't have anything to back up, then just skip this step.
You must have an Apple Developer Program membership (sign-up here). It will set you back $99 on an annual basis, and is totally worth it if you want to test out Apple's latest software before anyone else. Your device's UDID must be registered with Apple. See the 'Register Device UDID' section here for more details. Last but not the least, download and install Xcode beta from the Apple Developer portal before performing the restore.
